Nivalis Nights Recipes: 9 Dish Categories, Confirmed Names and Real Gaps
Nivalis Nights has 190 meals and 505 has published the name of four of them. There is no official recipe list, no ingredient quantities, no unlock table and no equipment-to-dish mapping on Steam or the community FAQ — which is why the recipe sites on these search results are padded with the same nine category words and a promise to verify later. What the developer has published is short and precise, and one Steam thread answers the edit-recipes question the official text never addresses.
The nine dish categories, in 505's own words
The 14 August 2026 menu announcement is the only first-party text that categorises the food. It says you "serve food from a wide range of categories" and lists exactly nine, reproduced as published with no dish attached to any:

The four dishes the developer actually names
The same post names four dishes, each inside a one-line scene. Two facts no guide repeats: Summer Salad is seasonal, and menu variety affects income.

That seasonal line is the most concrete cooking rule in any official text: Summer Salad is available in summer and banned otherwise. No source says how long a season lasts, when summer begins, or whether a ban stops you serving the dish or only stops ordering. The same post is the only text tying variety to profit: the right variety "can make all the difference, both for your wallet and for their experience", with some dishes "decidedly more exclusive than others" — tiers never named or priced.
What cooking actually requires
The whole spec is one sentence: "To prepare them, you'll need the right recipes and ingredients, as well as the right equipment." Three inputs, no further official detail.
- Recipes — the 31 March 2026 community Q&A: "As you progress, you'll unlock new recipes and even customize them, adding another layer to how you run your restaurant." The trigger is progress, not currency or venue level, and no source names what progress means.
- Ingredients — 240-plus per the May 2026 devlog, from markets, your greenhouse or your boat. The FAQ ties them to cold storage: "Keeping your fridges and freezers stocked is an important part of making them a success." - Equipment — the input 505 documents least. No equipment list, no category per appliance, no rule for which device makes which dish. The only evidence it is a real purchasable layer is a launch-day diary: PC Gamer's live blog records Ramen Noir acquiring a "drink machine" and a "food processor" in week one.
The pinned Read First / Known Issues post of 29 September 2026 lists six categories under active work, and cooking documentation is not among them. As of 23:00 UTC on 30 September the news feed still carries no patch notes. Mapping devices to dishes today is mapping them by observation.

How to edit a recipe — the answer is in a thread, not the game
The official FAQ has no cooking section at all: across its full text the words "recipe", "kitchen", "cook" and "equipment" never appear. Players filled the gap. A thread titled "So she told me to edit recipes.... How?" was opened on 29 September 2026 by someone told to do it with no detail. The first reply, marked by the original poster as the answer, points at the object outside your shop:
The sign at the front/corner of your shop. You'll be able to add/remove recipes from the menu.
A second reply distinguishes the two operations the game's wording runs together:
To edit a recipe (not add or remove from menu) you go into the same UI at the front of your shop and once it has been added to your Menu there is an option on the food for adding different ingredients. Not all recipes can be changed.
Adding a recipe to your menu and editing one are different actions in the same panel — the sign outside your venue, not a recipe book. And not every recipe is editable, with no source saying which are or why. That sentence is the honest boundary of the customisation system, and it comes from a player who tested it.
Add the dish at the sign outside your venue, then reopen the panel and look for the ingredient option on the food itself. No option means that recipe is fixed.
What the achievement list proves about how far menus get built
Steam publishes all 120 achievements with global unlock rates, and the food ones form a clean funnel. Rates were pulled at 22:58 UTC on 30 September 2026, day two after launch; they move hourly and Steam floors the display at 0.1%.

Menu breadth is the gate, not depth — a 55.6% majority have a drink on the menu and only 15.5% have put a dessert there, making the dessert slot the most commonly missing item in the game. "Noodle Bar Introduction" sits at 71.7% with no description on Steam at all, almost certainly the tutorial step that unlocks your first recipe, though Valve does not say so. Nobody has published the formula that turns a menu into a score.

What players hit in the kitchen
Player reports from the Steam review feed and discussion boards, read 30 September 2026. None is a confirmed rule.
Ingredients spoil, and the fridge is the answer. A thread titled "Rotten food?" opened with six chicken going bad overnight alongside onions and noodles. The replies settle it: "Chicken needs to be in the fridge to keep preserved." Another claims spoiled food's lifetime "is randomly within that 2 days", and notes bad stock can be cleared by selling it to a vendor at no cost.
The cook uses the newest stock first. One reply states that "it appears you use newer ingredients before older when making food at the bar." That is the waste loop a community mod fixes: Nivalis - FIFO sorts stock by time left before spoilage. Our mods page covers it and 505's stance: "This isn't part of the game's scope at the moment."
The 190 figure is a scope number, not a catalogue. The May 2026 optimisation devlog used it to explain a UI problem: content "which includes over 240 ingredients, 190 meals, 100 quests, and 620 furniture items" demanded attention for "performance and readability". No page on the internet has the 190 dish names and we are not going to invent them. Nor will we publish a per-dish unlock condition, price, popularity score or equipment mapping, because no official source exists for any of the four — if a recipe site gives you all of those, it is generated filler. Also absent from every official source: dish counts per category, ingredient quantities, which recipes are editable, season length, and the 4-star formula.
